This recipe comes from the popular Tokyo patisserie-Ressources, and is made with both plain and cocoa doughs. The cookies have a rich buttery flavor and a delightfully crisp texture—definitely a must-try for cookie lovers! Ingredients: •unsalted butter 148g •powdered sugar 80g •whole egg 56g •almond powder 60g •cake flour 270g (144g to make original taste, 126g to make chocolate •taste) •cocoa powder 18g Tips: 1.Butter needs to be softened in advance. 2.Egg should be used at room temperature. Instructions: 1.Stir 148g soften unsalted butter until smooth, add 80g powdered sugar and stir well. 2.Pour 56g whole egg in three times and stir evenly for each time. 3.Add 60g almond powder and mix well, then divide 1/2 into another bowl. 4.Sift 144g cake flour in the original dough and stir well, then press and grind the dough along the inside of the bowl. 5.Sift 126g cake flour, 18g cocoa powder in the cocoa dough and stir well, press and grind the dough along the inside of the bowl. 6.Place the dough on the baking paper, roll out about 3-4mm in thickness, freeze for 1 hour, then cut into a rectangle about 2.5cm in width. 7.Stack the two colored doughs alternately, press down from top to bottom, fold and press again. Repeat this process several times, then shape the dough into a cylinder in 3.5cm diameter. Use a scraper and baking paper to fix the shape, then roll it up and freeze for 1 hour. Then cut into 7mm in thickness and transfer into the baking pan. 8.Preheat the oven to 170°C/338°F and bake for 12mins, once baked, let it cool on a wire rack. Welcome!
