Collaboration with Pride Fish 🐟 This time, we used "Izu no Chikinme" (local golden snapper) from Shizuoka Prefecture to make a creamy dish of steamed golden snapper with white wine and napa cabbage and ginger. The freshness comes from the daily fishing operations unique to Izu, and the golden snapper has a rich, fatty flavor. This time, we brought out that umami with white wine, and gently brought it together with napa cabbage, ginger, and fresh cream. A rich yet light flavor, a new deliciousness of golden snapper. [Steamed Alfonsino in White Wine with Creamy Cabbage and Ginger / Recipe] ◆Ingredients (1 serving) Alfonsino - Half a fillet Cabbage - 2 leaves Green onion - 30g Ginger (julienned) - 25g Anchovy paste - 5g Heavy cream - 70cc Milk - 70cc Salt - to taste Butter - 10g White wine - 70cc Ginger (julienned) for garnish - 3g Olive oil - to taste ◆Instructions ① Fillet the alfonsino into three pieces and remove the bones. Divide the fillet into two portions. Season each portion with 1% salt to remove excess moisture. ② Cut the cabbage leaves into bite-sized pieces, and thinly slice the core. Cut the leeks diagonally into 1cm wide pieces. ③ Heat olive oil in a pot, then add the julienned ginger and sauté until fragrant. Next, add the anchovy paste, chopped leeks, and napa cabbage, season lightly with salt, and sauté briefly. Add the white wine, place the snapper from step ① on top of the vegetables, cover, and steam over medium heat. Once the snapper is cooked, remove only the fish, cover with plastic wrap, and keep warm. ④ Add the heavy cream (70cc) and milk (70cc) to the pot from step ③ and simmer while cooking the vegetables. Once the vegetables are tender, season with butter (10g) and salt. ⑤ Finally, return the snapper from step ③ to the pot and let the flavors meld. 【Serving】 1. Arrange the vegetables and sauce on a plate, then place the snapper on top. Garnish with the ginger. #Hakutsuru #FishDay #FishCookingClub
