In this video, we’ll visit a huge vintage bazaar in Istanbul, take a walk around my neighborhood, stop by the local market, and attend my daughter’s school graduation ceremony. I’ll also be making two summer desserts: 🍑 a puff pastry tart with cream and seasonal fruit; 🍐 gently stewed fruit with cinnamon and star anise, served with a ricotta and gorgonzola cream. Thank you for spending this day with me ❤️ ━━━━━━━━━━━━━━━ 🍐 Stewed Fruit with Cheese Cream, Orange Zest & Nuts Ingredients: • 2–3 pears • 2–3 apples • or any seasonal fruit: peaches, nectarines, apricots • 20–30 g butter • 2 star anise pods • 1 cinnamon stick • 1–2 tbsp honey • 2–3 tbsp water • a little lemon juice (optional) For the cream: • ricotta • gorgonzola • zest of 1 orange For serving: • a handful of walnuts • a handful of hazelnuts Adjust the cheese ratio to your taste. For a milder flavor, use more ricotta. For a stronger flavor, add more gorgonzola. Method: Peel the fruit and cut into large chunks. Melt the butter in a pan, add the fruit, star anise and cinnamon. Cook for a few minutes, then add the water and honey. Simmer gently for about 10 minutes. The fruit should soften while still keeping its shape and a slight bite. Add a few drops of lemon juice if desired. For the cream, mix the ricotta, gorgonzola and orange zest until smooth. Roughly chop the walnuts and hazelnuts. Mix some of the nuts into the cheese cream and reserve the rest for serving. Serve the warm fruit with the cheese cream and sprinkle with the remaining nuts. Enjoy!
