Super classic: Angel Cake😍 8 egg whites 1 drop lemon juice 1 tsp vanilla essence 65g powdered/tall sugar 130g flour 200g plain white sugar Place the egg whites in a bowl with the lemon drops and vanilla essence. Beat until doubled in volume. Add the sifted talcum sugar. Continue beating until you get a smooth meringue. Sift the powdered sugar with the flour twice. Fold it into the batter with a wire whisk and fold it into a cake tin. Place in an ungreased or floured tube pan. Bake in a preheated oven at 160°C for 35 minutes, or until no indentation is left when pressed with your finger. Cool upside down. Unmold. Sprinkle with powdered sugar.
