Rodrigo Hilbert teaches you how to prepare a DELICIOUS recipe for bobó made with mixed mushrooms and spices and passion fruit farofa! Check out the step-by-step instructions: INGREDIENTS Mushroom Bobo 150 grams of Portobello mushrooms 150 grams of shiitake mushrooms 150 grams of shimeji mushrooms 1 kilo of peeled cassava 200 milliliters of coconut milk 2 tablespoons of butter 1 onion, peeled and chopped 1 tablespoon of grated ginger 2 cloves of garlic, peeled and chopped 2 chopped tomatoes Half a bunch of chopped cilantro 1 teaspoon of turmeric powder 1 chili pepper, chopped and seeded Salt and black pepper to taste Drizzle of olive oil Passion fruit farofa 300 grams of toasted panko breadcrumbs Pulp of one large passion fruit 1 generous tablespoon of butter 1 drizzle of olive oil Half a red onion, peeled and chopped 2 cloves of garlic, peeled and chopped Chopped mint to taste Salt to taste METHOD PREPARATION Place the cassava in a pressure cooker and cover with water. Bring to a boil and cook for 20 minutes after pressure is reached. Remove the stems from the shimeji mushrooms. Slice the shiitake and Portobello mushrooms. Set aside. Once the cassava is cooked, reserve 90% of the cooking water and process it with the remaining 10% using a food processor or blender. Add the coconut milk and season with salt to taste. In a saucepan, heat a tablespoon of butter and olive oil. Sauté the onion and garlic. Add the ginger, turmeric, and tomato. Mix well. Add the mushrooms, butter, and chili pepper and mix well. Add this sautéed mushroom mixture to the cassava cream and, if necessary, add a little of the cassava cooking water. Let it simmer until the flavors blend. Season with salt and black pepper to taste. To finish, sprinkle with cilantro, stir, turn off the heat, and serve. Passion Fruit Farofa In a pan, heat the butter and olive oil and sauté the onion and garlic. When they are translucent, add the passion fruit. Add the panko crumbs. Stir constantly to prevent burning. Season with salt to taste and mint.
