Sweet lemon and cinnamon doughnuts, Grandma's doughnuts, Saint Blaise doughnuts, or as we call them in Valencia, Rotllets de San Blai, a traditional village pastry recipe that you'll love. Today we're making traditional Grandma's doughnuts, a simple recipe with ingredients you probably already have at home, perfect for any occasion, a treat that will please both young and old. A little bit of trivia: The legend of Saint Blaise doughnuts is based on the most famous miracle of Saint Blaise, bishop of Sebaste (present-day Turkey), who was known for his healing powers and saved a child from choking on a fishbone stuck in his throat. For this reason, he is the patron saint of throats, and every February 3rd, doughnuts and sweets are blessed in churches to protect against throat ailments, a ritual that, according to tradition, provides protection throughout the year. Legend and Tradition: The Origin: Saint Blaise, a 4th-century physician and bishop, had the gift of healing people and animals. The Key Miracle: His most remembered miracle is removing a fishbone that threatened to kill a child. The Connection with Doughnuts: As a result of this event, he became the protector of the throat, and popular tradition associated his figure with ring-shaped bread or sweets to be blessed. The Rite of February 3rd: On his feast day (February 3rd), people take these doughnuts (sometimes adorned with ribbons) to church to be blessed, thus protecting them from throat ailments and colds. How Was (and Is) Celebrated? Blessing: The doughnuts are taken to church to be blessed by the priest with holy water. Protection: Afterward, they are eaten as a family, in the belief that they cure and prevent throat ailments throughout the year. Variations: There are other associated traditions, such as wearing blessed cotton cords around the neck for a few days for the same purpose. The preparation of these doughnuts is very varied, almost as varied as the households that make them, since each one gives them their own characteristic touch: with anise, without anise, with or without a coating, with lemon, with orange...
