Galatopita (Greek Milk Cake) 🛒 Ingredients (26 cm / 10.2 in diameter mold) (12 servings): 🔸 1250 ml milk (5 cups) 🔹 150 g sugar (¾ cup + 2 tbsp) 🔸 110 g fine wheat semolina (½ cup) 🔹 30 g cornstarch (¼ cup) 🔸 3 eggs 🔹 Zest of 1 lemon 🔸 50 g unsalted butter (4 tbsp) 🔹 ½ tablespoon vanilla essence (½ tbsp) 🔸 A pinch of salt (¼ tsp) Topping: 🔸 1 egg 🔹 2 tablespoons sugar (2 tbsp) 🔸 2 tablespoons milk (2 tbsp) To serve: 🔸 Powdered sugar 🔹 Ground cinnamon 🍳Galatopita or Greek Milk Cake Recipe, step by step: 1️⃣ Grease the pan with a little butter and sprinkle a couple of tablespoons of semolina over the top. Spread it over the surface, removing the excess by turning the pan over if necessary. In a bowl, mix the semolina with the cornstarch and a pinch of salt. Add the vanilla extract, lemon zest, and beaten eggs. Stir until smooth. Set aside. 2️⃣ In a large saucepan, heat the milk with the sugar over medium heat until it comes to a boil. Stir occasionally to mix the sugar well and prevent it from burning. Remove from heat and wait 5 minutes for the temperature to cool slightly. 3️⃣ Take a ladleful of milk and pour it into the egg mixture, stirring vigorously. Repeat 2 more times. 4️⃣ Pour the resulting mixture into the pot with the remaining milk. Return it to the heat and, stirring constantly, cook over low heat until it thickens and begins to bubble. 5️⃣ Remove from the heat and stir in the diced butter, which will melt with the heat. 6️⃣ Pour the mixture into the pan and level the surface with a spatula or spoon. 7️⃣ In a bowl, mix the egg, sugar, and milk for the topping. Brush the surface of the cake and gently pour the mixture over it. 8️⃣ Bake in a preheated oven at 180ºC (350ºF) for 40-45 minutes. Let cool to room temperature and then refrigerate for about 3 hours before serving. Serve with a sprinkle of powdered sugar and cinnamon on top.
