No-Bake, Egg-Free Toffee (or Salted Caramel) Flan. 🛒 Ingredients (21 x 11 cm / 8.2 x 4.3 in inner pan): For the salted caramel (toffee): 🔸 200 g sugar (¾ cup + 1 tbsp) 🔹 200 ml heavy cream (¾ cup + 1 tbsp) 🔸 30 ml water (2 tbsp) 🔹 ½ tsp salt 🔸 30 g unsalted butter (2 tbsp) For the flan: 🔸 300 ml heavy cream (1 ¼ cups) 🔹 200 ml whole milk (¾ cup + 1 tbsp) 🔸 7 sheets of unflavored gelatin (12 g powdered gelatin) (1 tbsp) + 1 tsp) 🔹 8 ladyfinger biscuits (optional) Decoration (optional): 🔹 Whipped cream 🔸 Caramelized cream 🍳Steps: 1️⃣ In a small saucepan (I recommend one with high sides), combine the sugar and water. Once the sugar has been completely dissolved, turn the heat to medium-low. When the mixture turns amber, reduce the heat to low and carefully pour in the hot cream (it must be very hot, almost boiling) as bubbles will rise. Mix with a spatula and cook for 1 more minute. 2️⃣ Remove from the heat and add the diced butter and salt. Stir until well combined. 3️⃣ Pour about 6 tablespoons of the caramel into the mold and spread it evenly over the surface with a gentle back-and-forth motion. And put it in the refrigerator. 4️⃣ Soak the gelatin sheets in cold water for about 10 minutes. 5️⃣ Return the saucepan with the remaining caramel to the heat, add the 300ml of cream and the milk. Heat over medium heat, mixing well. When hot, add the drained gelatin sheets and stir until dissolved. Remove the mixture from the heat. 6️⃣ Take the mold out of the refrigerator and slowly and gently pour the mixture over the caramel. 7️⃣ Place ladyfinger biscuits on the base and refrigerate for at least 6 hours before serving. It's best if left overnight. You can decorate it with whipped cream on top and some cream or toffee candies. 👌 Notes for the no-bake, eggless salted caramel flan: 🍮 Be careful that the caramel doesn't darken too much, as it will become bitter. 🍮 You can substitute the ladyfingers with cookies, pieces of cake (even dried ones), sponge cake...
