KETO POPPY SEED SWISS ROLL | SOFT, NUTTY & SUGAR-FREE DESSERT | LCHF RECIPE
Hello everyone, welcome back to Shivani’s LCHF Kitchen 💛 Today I’m super excited because I’m sharing a very special keto dessert with you all. It is my Keto Poppy Seed Swiss Roll – So if you’re following keto or LCHF lifestyle, this recipe is perfect for you. Let’s get started 👩🍳✨ Step 1: Dough Preparation First, we’ll prepare the dough. Take a mixing bowl. Add 150 grams cottage cheese into it. Now crack two whole eggs. Blend this nicely until you get a smooth, lump-free paste. This step is very important because it gives softness to our roll. Now add: 70 grams almond flour 30 grams coconut flour Mix gently. Next, add 50 grams butter and 30 grams monk fruit sweetener. Now add half teaspoon xanthan gum. This helps in binding and gives a good structure to the dough. Knead everything properly until a soft dough is formed. Once done, wrap the dough and keep it in the fridge for 30 minutes. This resting time makes rolling very easy. Step 2: Black Poppy Seed Filling Now let’s prepare our black poppy seed filling. Take a saucepan and add: 100 grams black poppy seeds 200 ml water 25 grams butter Cook this on low flame for about 15 to 20 minutes. Keep stirring occasionally. Cook until all the water evaporates and you get a thick, rich filling. Switch off the flame and let it cool slightly. Our filling is ready. Step 3: Rolling the Swiss Roll 💫 Take two parchment papers. Place one parchment paper on the counter. Put the dough on it. Cover with the second parchment paper. Gently roll the dough into a rectangle shape. Don’t rush—slow and gentle is the key. Now remove the top parchment paper. Spread the poppy seed filling evenly all over the dough. Using the parchment paper, start rolling slowly. Once rolled completely, carefully transfer it to a baking tray. Step 4: Egg Wash & Baking For egg wash, 1 egg yolk 1 tablespoon cream Mix well and brush it gently on top of the roll. This gives a beautiful golden color. Bake in a preheated oven at 180°C for 45 minutes, or until the top turns golden brown. Final Reveal Once baked, let it cool completely. Then slice it gently. Look at this beautiful swirl 😍 Soft, nutty, aromatic, and absolutely keto-friendly. Serve it with tea or coffee and enjoy guilt-free.
