Snacks—entities that have undergone ceaseless development over the past century and transformed the nation's food culture across generations. Beyond mere momentary sweetness, snacks have established themselves as a part of human culture and the history of each country. And behind this lies the advancement of science and technology that made all of this possible. Part 2 of *Snacks, Benefiting the World Through Taste*, titled *Western Bread and Snacks, Changing Food Culture*, examines the new bread and snack culture in Korea that began in earnest after liberation. From "Hangwa" (traditional Korean confectionery), which was a precious treat enjoyed only by special people during special moments (refer to Part 1), to the transformation into mass-produced snacks offering a universal sweetness that everyone can enjoy at any time. We explore the history of Korean snacks since the 1950s, a period made possible by mutual influence between Eastern and Western confections, combined with the convergence of various scientific technologies such as factory automation. The history of Korea's bread and snack culture after liberation began with local bakeries, where Koreans finally became the owners. We examine the history of famous regional bakeries in Korea that are still beloved today, as well as the manufacturing processes of their representative early products, recreated using the methods of that era. Snacks made by our own hands, finally available for us to enjoy. From Jeonbyeong, Hwajeon, Yanggaeng, and Manju to snacks filled with ice cream, pastries made by combining various types of bread and frying them, and even cakes. The bakery snacks of that era, which brought happiness to our mouths, contain countless scientific principles and creativity. However, bakery snacks remained a luxury culture, preventing them from becoming a pleasure accessible to everyone. Following the campaign to promote flour-based foods that began after the Korean War, wheat became an ingredient that our citizens could access at an affordable price, unlike in the past. Furthermore, Western ingredients flowing in from U.S. military bases also influenced our bread and snack culture. With the introduction of foreign foods such as chocolate, butter, and almonds, and the availability of mass production systems enabled by factory automation technology from domestic confectionery companies established after liberation, Korea's snack culture entered a Renaissance era. Snacks, which anyone can now easily enjoy at an affordable price. For those who lived through times of hunger, they served as a small source of happiness amidst hardship. For others, they offer a thrilling sweetness that brings back memories, childlike wonder, and vitality.
