EASY EASTER MEAL For ONE Or TWO People || Homemade MINI Carrot CAKE

Come along with me today as I cook for one, just me! I keep my meals pretty simple, especially when cooking for one. You're important enough to cook delicious food for yourself, just like you do for others! Who says you can't have a delicious Easter dinner when you're only cooking for one or two people??!! SHEET PAN PINEAPPLE HAM & VEGGIES PINEAPPLE GLAZED HAM • 1 Ham steak • 2 slices pineapple • 2 Tbsp honey • 2 Tbsp brown sugar • ½ to 1 tsp apple cider vinegar • ½ to 1 tsp Dijon mustard ROASTED GARLIC HERB POTATOES & GREEN BEANS • Baby potatoes, halved • Fresh green beans, trimmed • Olive oil • Minced garlic • Thyme (fresh or dried) • Onion powder • Salt & pepper INSTRUCTIONS 1. Halve the baby potatoes & trim the green beans. 2. Slice the ham steak in half and arrange them in the center of a sheet pan. Place one pineapple slice on top of each one. 3. In a bowl, toss the potatoes & green beans with olive oil, minced garlic, thyme, onion powder, salt & pepper (all to taste). 4. Spread the seasoned vegetables around the ham on the sheet pan. 5. Next make your glaze for the ham & pineapple. 6. In a small saucepan over medium heat, combine the honey, brown sugar, apple cider vinegar, & Dijon mustard. 7. Simmer until the mixture thickens into a glossy glaze. 8. Generously brush the glaze over the pineapple and the ham slices. 9. Preheat your oven to 450* F 10. Place the sheet pan in the oven and bake for 25 to 30 minutes or until the potatoes are tender and the ham is caramelized. MINI CARROT CAKE INGREDIENTS FOR THE CAKE • ¼ c sugar • 2 Tbsp butter (melted) • 1 large egg yolk • 1/8 tsp vanilla extract • ¼ c all purpose flour • ¼ tsp baking powder • 1/8 tsp ground cinnamon • 1/8 tsp salt • 1 Tbsp milk • ¼ c grated carrots • 1 Tbsp chopped pecans (optional) FOR THE FROSTING • 1 ounce cream cheese (softened) • 1 Tbsp butter (softened) • ¼ c powdered sugar • ¼ tsp vanilla extract INSTRUCTIONS MAKE THE CAKE 1. Preheat the oven to 350* F. Lightly butter a 10 ounce ramekin. 2. In a medium bowl with a hand mixer on medium speed, blend the sugar, melted butter, egg yolk, & vanilla until smooth. 3. In a separate bowl whisk together the flour, baking powder, cinnamon, and salt. 4. Gradually add the dry ingredients into the wet ingredients blending on a medium speed until well combined. 5. Pour the milk into the mixture and mix until smooth. 6. Fold in the grated carrots & chopped pecans. 7. Transfer the batter to the greased ramekin and bake for 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean. MAKE THE FROSTING 1. In a bowl, mix the softened cream cheese and butter until smooth. 2. Add the powdered sugar & vanilla and mix until well combined. 3. Once the cake has cooled completely, spread the frosting evenly over the top.
