Queques / Kekis panameños

Delicious and traditional coconut, sugarcane honey, and ginger cookies that remind us of our childhood. Ingredients 2 cups flour 1 cup sugarcane honey 1 cup shredded (or chopped) coconut 2 tablespoons butter 2 tablespoons shortening 1/4 teaspoon salt 1/4 teaspoon baking soda 1 teaspoon cinnamon **Depending on the flour, the climate, and the honey you use, you may need a little more flour. In my case, I added an extra 1/4 cup. Instructions 1. Preheat oven to medium heat. 2. Mix dry ingredients (flour, salt, baking soda, cinnamon). 3. Add ginger and honey and mix well. 4. Add butter and shortening. (It's a sticky dough) 5. Using two spoons, drop portions of the dough onto a greased baking sheet. 6. Bake for 30 minutes (start checking after 20 minutes; if the edges are lightly browned, they're done). I hope you enjoy and try these recipes.
