Lay a sheet of greaseproof paper onto your work surface. Take a slice of streaky bacon, gently stretch it and place it onto the paper. Add another slice slightly overlapping the first and continue working in a circular pattern until you've created a complete bacon circle with no gaps. Place the Camembert in the centre of the bacon. Using the greaseproof paper to help, carefully lift and wrap the bacon around the cheese until it is completely encased. If cooking indoors, place onto a foil-lined tray or into a cast iron dish. You can also cook this way on the BBQ. I prefer to cook mine directly on the grill grates which allows the bacon to crisp up beautifully. You'll lose a little cheese, but not much. Place onto the BBQ and cook indirectly at 180°C / 350°F. Brush the top with maple syrup and cook for 10 minutes. Carefully flip the Camembert over, brush with more maple syrup and continue cooking for a further 8-10 minutes until the bacon is crispy and caramelised. Remove from the BBQ or oven and allow to rest briefly before serving with warm crusty bread. I cooked a ready-to-bake baguette alongside the Camembert on the BBQ and it worked perfectly. This is one of those recipes that's almost too easy to call a recipe, but the combination of smoky bacon, sweet maple syrup and melted Camembert is absolutely incredible.
