A superb dough for lazy vareniki that the whole family will love! Through trial and error, I found the perfect dough proportions, and now this is the only way I make my favorite lazy vareniki. 0.5 kg 9% cottage cheese (the cottage cheese should be dry!!! This is important; if the cottage cheese is wet, you can strain it in a sieve to remove excess liquid, or add 1 tablespoon each of semolina and flour) 3 tablespoons sugar 1 egg 2 tablespoons semolina (or regular semolina if you don't have semolina) 2 tablespoons flour (plus flour to dust the dough and countertop) BE SURE TO LET THE DOUGH REST FOR 30 MINUTES!!!
