No Chew Food for Soft Food & Puree Diets: Sour Cream Chicken Enchiladas

This is a "no chew" version of Sour Cream Chicken Enchiladas that is great for those who need to be on a soft diet. Prepared Polenta 2 cups cooked & pureed chicken 1 small onion, sauteed & pureed with chicken (optional) salt & pepper to season chicken 2 oz green chilies (pureed) 1/2 cup sour cream Shredded Mexican Blend cheeses Jalepeno juice or jalepeno peppers (pureed) Sauce: 2 Tbs butter 2 Tbs flour 2 cups chicken broth Melt butter in saucepan; add flour & cook for 1-2 minutes over medium high heat, stirring constantly. Whisk in chicken broth & cook over medium heat until thickens, about 5 minutes. Remove sauce from heat & add pureed green chilies & sour cream. Stir until blended. Assemble by spreading thick layer of chicken over prepared polenta. Sprinkle with Mexican Blend cheeses. Pour sauce over top. Sprinkle with jalepeno juice or pureed jalepeno peppers. Bake at 350 degrees for 20 minutes. Eat within three days; this does not freeze well.
