Now add the almond flour, icing sugar and the vial of almond flavouring, then mix everything with a spatula. When the dough has reached a certain consistency, we continue to work it by hand until we obtain a “consistent” and homogeneous dough. We cover it with cling film and let the dough rest in the fridge for 8 hours or for a whole night. After the resting time, we take the dough and form with our hands balls the size of a ping pong ball weighing about 35g each. With the doses given we will obtain about 30 biscuits. Now we decorate each biscuit with candied cherries and whole almonds; as a “glue” to make the elements stick to the pastries we use simple egg white. After applying (for example) the cherry, we pass the biscuit in the icing sugar or granulated sugar. We can also decorate the biscuits by simply passing them in the chopped pistachios and pine nuts. Once the biscuits are ready, we bake them in a static oven preheated to 170 degrees for 15-20 minutes. The biscuits must absolutely not darken, in fact it is better to leave them slightly undercooked. The almond pastes are ready to go to the table and are perfect to accompany a good liqueur at the end of the meal or a cup of coffee.
