Ingredients: 250 g Soya Chunks 2 tbsp Oil 1 tsp Ghee (for roasting soya) 1 tbsp Garlic, finely chopped 1 tbsp Ginger, finely chopped 2 Medium Onions, roughly chopped 2 Medium Tomatoes, roughly chopped 2 Medium Capsicums, roughly chopped Salt to taste ½ tsp Black Pepper Powder ½ tsp Chilli Flakes 2 tbsp Schezwan Chutney 2 tbsp Tomato Ketchup 1 tbsp White Vinegar 👩🍳 Procedure: 1. Boil the soya chunks in salted water for 4–5 minutes. Drain and squeeze out the excess water. 2. Roast the boiled soya chunks in 1 tsp ghee for 2–3 minutes and keep aside. 3. Heat oil in a pan. Sauté garlic and ginger until fragrant. 4. Add onions and cook until slightly soft. 5. Add tomatoes and capsicum. Cook for 1–2 minutes, keeping them slightly crunchy. 6. Add salt, black pepper and chilli flakes. 7. Mix in the roasted soya chunks. 8. Add Schezwan chutney, tomato ketchup and white vinegar. Toss everything well for 1–2 minutes. 9. Serve hot and enjoy! ⭐ Tips: Roast the boiled soya chunks for a better texture. Do not overcook the vegetables to keep them crunchy.
