Turkish Soup 🇹🇷🥣 For one pot 2.5-3 l (4 servings) Ingredients 1 cup (200 g) red lentils 1 tbsp bulgur 1 tbsp rice 1 large onion 2–3 cloves of garlic 1 tbsp tomato paste 2 tsp dried mint 1 tsp sweet paprika powder 1 tsp sugar 2 tbsp olive oil 2.5 l hot water or broth Salt to taste Lemon for serving For the topping 2 tbsp ghee (clarified butter) 1 tsp chili flakes 1/2 tsp paprika powder Preparation Rinse the lentils, bulgur and rice. Heat the olive oil in a saucepan. Add the finely chopped onion and sauté for 5-7 minutes. Add sugar and caramelize for another 2-3 minutes. Add chopped garlic, mint and paprika and roast for 30 seconds. Add tomato paste and sauté for 1 minute. Stir in the lentils, bulgur and rice. Pour in hot water or broth. Bring to a boil, then reduce the heat and simmer for 15–20 minutes until the lentils are completely soft. Puree the soup with a blender until creamy. Season with salt to taste and heat for another 1-2 minutes. Topping Melt ghee over low heat. Add chili flakes and paprika powder. Heat for 20-30 seconds without burning the spices. Serve Pour the soup into bowls, drizzle with the ghee-chili-paprika topping. Serve with a slice of lemon. 🍋🌿🔥
