Add the remaining dry ingredients and mix until a homogeneous dough is obtained. Divide the dough into 2 parts and shape into 2 rolls approximately 20cm long. Bake on a baking sheet lined with greased parchment paper. Preheat oven to 180ºC for 20 minutes. Remove from oven, let cool for 10 minutes. With a knife, cut diagonal slices and return the cookies to the oven for another 15 to 20 minutes, turning them halfway through, until they are very dry. Let cool completely. Dip half of the cookies in melted chocolate and let them rest on the parchment paper until the chocolate dries. Gluten-Free Gingerbread ½ ​​cup culinary sweetener ¼ cup honey 1 tsp ground cinnamon 1 tsp ground ginger ½ tsp ground cloves 50g coconut oil or butter 2 cups gluten-free flour 1 tbsp cocoa powder 1 level tsp baking powder 1 egg Preparation Method In a bowl, beat together the coconut oil, sweetener, and honey. Add the egg and mix well. Incorporate the dry ingredients and mix until everything is well combined. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Roll out the chilled dough between two sheets of parchment paper or plastic wrap to a thickness of 0.5cm. Return to the refrigerator or freezer until firm again. Cut out the cookies with cookie cutters and place them on a baking sheet lined with a silicone mat or greased parchment paper. Bake at 180ºC for 12 to 15 minutes. Decorate with chocolate or royal icing.
