Coconut Curry Tofu

Coconut Curry is a super flavorful curry that goes well with rice. This dish is a vegetarian version and is perfect for the fall weather. Ingredients: 1 Tablespoon Olive oil 1/2 cup Onion 1 each Sweet Potato 1/2 cup. Carrot shredded 1/4 cup. Sundried Tomato 2 teaspoon. Garlic, chopped 1.5 teaspoon. Onion powder 1 teaspoon. Garlic powder 2 teaspoon. Curry powder 1 teaspoon. Fresh thyme 18 oz. Tofu, cubes 1 cup. Green beans 2 cups. Coconut milk 2 cups. Veggie stock 1/2 cup. Green onion Directions: Sauté onions until soft Add sweet potatoes and carrots-cook 2 minutes Sauté garlic 30 seconds Add seasoning to bloom 2 minutes Add tofu and mix to coat Add green beans, coconut milk and veggie stock- bring to simmer Add green onion and adjust seasonings. Serve over basmati rice and enjoy!
