Click here for the recruitment form: https://www.sanpi-ryoron.com/recruit/ ■Squid and Taro Simmered Dish (Serves 3-4) [Ingredients] 2 Japanese flying squid, 8-10 taro, 8 green beans, a little yuzu peel A (500cc water, 2 tablespoons sake, 2 tablespoons mirin, 4 tablespoons soy sauce, 2 tablespoons sugar, 3g dashi kombu) [Directions] 1. Peel the taro without washing it. Cut it into bite-sized pieces if large. Rinse quickly with water. 2. Wash the squid. Use your fingertips to separate the body from the innards. Pull the legs to separate them. Remove the ink sac and cut out the innards. Cut off the two long legs. Remove the beak inside the legs. Cut out the eyes. Scrape the suckers off the legs with a knife to remove the tough parts, Cut into bite-sized pieces, and wipe off the water. Remove the cartilage from the body, Rinse the inside with water, wipe off the water, and Cut into 1cm wide slices. ③ Put ingredients A into a pot and heat. Once boiling, add the squid, Simmer briefly for 2 minutes, then remove. ④ Add the taro and once the broth boils, skim off the scum, Cover with a drop lid and simmer over low heat for 10 minutes. ⑤ Remove the kelp, add the squid back in, and simmer, stirring gently, until the broth is reduced. Add the snow peas (the strings have been removed) and simmer together. ⑥ Transfer to a serving dish and sprinkle with chopped yuzu peel.
