For the starter 100 g Strong 00 Flour 13.5% Protein W320/340 or Manitoba 100 g Milk 10 g Fresh Brewer's Yeast (4 g Dry Yeast) For the dough 400 g Strong 00 Flour 140 g Milk 80 g Sugar 1 Egg 1 Egg Yolk 8 g Honey 5 g Salt 2 teaspoons vanilla extract 50 g soft butter 100 g dark chocolate chips For the finishing touch 1 egg yolk 20 g milk Freeze the chocolate chips Prepare the starter: In a large container, dissolve the yeast in the milk, add the flour, and mix well. Cover and let rise until the surface is flat and cracked. At 28 degrees Celsius (82 degrees Fahrenheit) for about 2 hours. After kneading, place the dough in a buttered container and let it rise until doubled in size. Keep warm for about 90 minutes. Divide into 11 100 g pieces. Close each piece like a parcel, then turn it over and roll it between your hands. Arrange the brioches on parchment paper or on a baking sheet, spaced well apart. Cover and let rise until doubled in size, about 2 hours in a warm place. Brush the surface with egg yolk and 20g of milk, or just milk, and bake in a preheated oven at 180°C (350°F) for 15-18 minutes, or until lightly golden. If desired, place a baking sheet with water on the bottom for the first 7 minutes only. Remove from the oven and let the pangoccioli cool, covered with a cloth, for 30 minutes, for greater softness. Then remove the cloth and let them cool completely on a wire rack.
