Place in a container and, after 2 hours at room temperature, refrigerate for 18-20 hours. The next day, knead the dough with the remaining ingredients. Place the dough in a baking dish, cover, and perform two sets of folds in the bowl, 30 minutes apart. After the final fold, place the dough in a container and let it rise until it's 70% larger, less than doubled in size. At 23°C (73°F), this will take about an hour. Turn the dough out onto a surface dusted with semolina and bring the edges to the center. Roll up, seal the ends, and transfer it to the proofing basket. Bring the edges together and dust with semolina. Transfer to the refrigerator for about 90 minutes. Check the rise with your finger. When ready, turn on the oven and transfer the basket to the freezer. Cut the slices and cook on a baking stone or in a pot at 240°C for 25 minutes with steam or a lid, then at 200°C for 10 minutes, then at 180°C for 15 minutes, and finally at 140°C with a draft for 15 minutes.
