West Virginia Pepperoni Rolls - A Soft Baked Bread Roll Stuffed with Pepperoni and Cheese
West Virginia Pepperoni Rolls DOUGH 4 cups all-purpose flour 2 envelopes (4 1/2 teaspoons) RapidRise Yeast 4 Tablespoons sugar 1 cup milk 1/2 cup water 1 teaspoon salt 4 Tablespoons butter ROLLS pepperoni cheese (we used mozzarella) - use your favorite melted butter In a mixing bowl fitted with a dough hook, stir together about half the flour with the undiluted yeast and sugar. In a small saucepan, or a microwave safe bowl, heat together the milk, water, salt, and butter to a temperature between 110° and 115°. Add the warmed liquid mixture to the flour mixture. Allow the dough hook to run for two minutes, occasionally scraping down the sides of the bowl. Then, begin adding approximately 1/2 cup of additional flour at a time, allowing the mixer to run two minutes after each addition, until you have added enough flour to form a soft dough. Once you have a soft dough forming, allow the dough hook to run for approximately five minutes to knead the dough. The dough should pull away from the sides of the bowl and pick up all the loose flour and bits on the bottom of the bowl.  Cover and allow to rest for 10 minutes. To Form the Rolls: Divide the dough into approximate 3 ounce dough balls. (You should get 12 balls) Roll out each ball of dough into a large thin rectangle. Place 3 to 6 slices of pepperoni on one end of the dough and top with a cheese stick. Roll up the pepperoni and mozzarella inside the pepperoni roll, making sure to tuck in the sides as you roll. Place seam-side down on a parchment paper covered baking sheet, cover with a clean tea towel, and allow to rise for 30 minutes in a warm spot. Preheat your oven to 375°. Lightly brush each pepperoni roll with melted butter. Bake the pepperoni rolls for 20 to 25 minutes or until done and the tops are lightly browned.  Serve warm or at room temperature. If desired, serve with pizza sauce for dipping. Pepperoni rolls should be stored at room temperature.
