Lemon Sponge Pie 3 Tablespoons butter, room temperature 3/4 cup sugar 2 eggs, yolks and whites separated 1 Tablespoon lemon zest 1/4 cup lemon juice 3 Tablespoons flour 1/8 teaspoon salt 1 cup milk unbaked 9-inch pie crust Preheat oven to 425°. Cream together the butter and sugar. Add the egg yolks, one at a time. Add in the lemon zest, lemon juice, flour, and salt. Slowly stir in the milk. In a separate bowl beat the egg whites until they are stiff. Fold them into the lemon mixture. Pour into the unbaked pie crust. Bake at 425° for 10 minutes.
