All this in an accessible recipe that you can adjust according to your flours and baking temperatures. 📌 Ingredients: • 300 g Khorasan/Kamut flour (wholemeal/semi-wholemeal or wholegrain) • 200 g wholemeal einkorn flour • 100 g sourdough starter • 380 g water (+ 20 g to dissolve the salt) • 10 g fleur de sel (sea salt flakes) 💡 If you are using less wholemeal flours, start with 340 g water (+ the water from the salt) and adjust according to the dough's texture. 🌡 Temperatures: • Base temperature: 70–72°C • Flour: 19°C • Room temperature: 20°C → Desired water temperature: 31–33°C ⚠️ If it's hot (25°C and above): • Reduce the amount of sourdough starter • Reduce the time between folds and the first rise • Lower the base temperature to 60–62°C • Reduce the fermentation time after shaping 🎥 Find the complete step-by-step method in the video!
