However, what truly captures the warmth of Quanzhou is often not the historical sites, but the aroma of fireworks on your tongue. In the early morning hours, Quanzhou's street corner stalls are the busiest. A pot of boiling noodle paste, thin white noodles swirling in a thick broth made from pork bones and thickened with pepper and sweet potato starch, creates a smooth, rich, and flavorful broth. Stall owners often top it with fried dough sticks, duck eggs, or even a spoonful of sea cucumber. Amidst the steaming heat, the first bite is filled with the subtle spiciness of the pepper, mingled with warmth, awakening the soul. This is the daily comfort of Quanzhou people. In the afternoon, the aroma of snacks wafts from the deep alleys. An elderly woman sits on a low stool, holding a ball of white glutinous rice. She adds mushrooms, shrimp, peanuts, and five-spice powder, kneads it into the size of a fist, and steams it in a steamer—this is fist-shaped rice dumpling. Lifting the lid, steam billows from the steaming dough, revealing the soft, glutinous rice, its savory aroma tinged with a subtle rice sweetness. Taking a bite reveals the interweaving of layers of ingredients, a simple yet rich flavor. Despite its unassuming name, it embodies the local sentimentality of Quanzhou residents, a true reflection of their authentic character. At festivals or family gatherings, Quanzhou residents always enjoy a serving of runbing. The paper-thin wrapper is spread out, dusted with peanut sugar powder, and then topped with bean sprouts, leeks, shredded carrots, braised pork, and greens, before being carefully rolled up. With a gentle bite, the crispness of the vegetables, the richness of the meat, and the sweet aroma of the peanut powder unfold layer by layer in the mouth. Runbingcai (a type of spring roll) is more than just food; it's a symbol of reunion. Holding one, it conveys not only flavor but also the warmth and sharing of the Quanzhou people. When night falls, Quanzhou's bustle truly begins. At the West Street Night Market, the sizzling oyster omelet is a must-try. The teppanyaki is sizzling hot, and the vendor expertly tosses oysters, eggs, and sweet potato batter onto the omelet, stirring until the aroma permeates. Once the surface is lightly charred, a spoonful of sweet and sour sauce is drizzled over it. Served, the oysters are crispy on the outside, tender on the inside, and juicy. One bite and the freshness of the seafood intertwined with the sweet and sour sauce instantly fills your taste buds. At the end of a summer night, a refreshing bowl of four-fruit soup is indispensable. The glass case in the small shop is filled with ingredients: red beans, mung beans, barley, lotus seeds, taro balls, and liangfen... Customers can choose whatever they like, then top it off with a refreshing syrup and crushed ice. A spoonful of it is filled with a chill that penetrates the heart, sweet but not cloying, and refreshing. Four-fruit soup is not only a remedy for the summer heat, but also a cherished memory for Quanzhou residents. Quanzhou cuisine lacks a glamorous appearance, yet is imbued with sincerity and depth. The warmth of the batter, the indulgence of the pancakes, the simplicity of the fist-shaped mother-of-pearl, the freshness of the oyster omelet, and the sweetness of the four-fruit soup... Together, they form the city's most vibrant footnotes.
