Light a chimney of Royal Oak Super-Sized Briquettes. Pour into one side of the grill for a two-zone setup. Let it stabilize around 300–350°F. 2. Apply Garlic Jalapeño Rub followed by Sweet BBQ Rub to both sides of the ribs. Let rest while the grill comes to temp. 3. Place ribs on the cool zone to smoke briefly, then move to the hot zone to build color. Flip and rotate every 4–5 minutes, alternating sides for 30–45 minutes. 4. Mix all mop ingredients in a pan. Warm on grill to blend flavors. 5. For the next 1.5 to 2 hours, continue flipping, rotating, and mopping every 15–20 minutes. Move ribs on and off the heat as needed. 6. Cook until ribs reach an internal temp of 200°F (about 4 hours total). Let rest 15–20 minutes before slicing.
