In today’s video, I’m showing you how one soft, fluffy dough can become three delicious recipes: 🍞 A classic loaf perfect for French toast 🍔 Soft buns for smash burgers 🥖 Buttery dinner rolls that melt in your mouth This Japanese milk bread (also called Shokupan) is made with a simple tangzhong starter — which gives it that signature cloud-like texture that stays soft for days. Once you master the base dough, you can turn it into anything! JAPANESE MILK BREAD RECIPE (I tripled this recipe to make all 3 meals) INGREDIENTS TANGZHONG (Starter) 3 tbsp All purpose flour 1/2 cup water 1/2 cup milk DOUGH 3 cups All purpose flour ½ cup sugar 1 tsp salt 21/4 tsp instant yeast ½ cup warm milk (start with ½ cup, add 1 tbsp more only if dough is dry) 1 large egg 2 tbsp unsalted butter, softened All of the tangzhong DIRECTIONS In a small saucepan, whisk together the flour, milk, and water. Cook over medium-low heat, stirring constantly, until it thickens into a paste (like pudding), about 1–2 minutes. Let it cool to room temperature before using. In a mixing bowl, combine the All purpose flour, sugar, salt, and yeast. Add in the cooled tangzhong, warm milk, and egg. Mix until a shaggy dough forms. Knead by hand or with a mixer for 5–7 minutes, then add softened butter. Continue kneading for 10–15 minutes (until smooth and elastic — it should pass the windowpane test). Shape the dough into a ball, place in a greased bowl, and cover. Let rise in a warm place for 60–90 minutes or until doubled. Punch down the dough and divide into 2 or 3 equal portions. Flatten each piece, then roll into a log. Place them side-by-side in a greased loaf pan. Cover and let rise again until the dough reaches about ½–1 inch below the rim of the pan (45–60 minutes). Preheat oven to 350°F (175°C). Bake for 30–35 minutes until golden brown on top. Optional: Brush with melted butter after baking for extra softness.
