Who said you can't make beef stroganoff without meat? They were wrong! We invited our wonderful friend, @NatalyNeri, to teach us how to make a delicious vegan stroganoff and tell us a little about her cooking practices. The fourth episode of the 4th season of Gastronodiva is now available! INGREDIENTS 150g textured/coarse white soy protein 2 large chopped onions 2 cups tomato passata 3 cartons of vegan cream 2 teaspoons ketchup Canned mushrooms Olive oil SPICES Salt Coriander Paprika Onion powder Cumin powder INSTRUCTIONS Heat 1 liter of water Place the soy protein in a bowl and hydrate with the hot water Squeeze the soy protein well in a potato ricer until all the water is extracted. - Set the protein aside in another bowl. Season the soy protein, still in the bowl, with your preferred seasonings. In a pan, heat the olive oil and sauté the chopped onions until golden brown. Add the soy and fry well until a crust forms. Gradually add the tomato passata and sauté well. Over low heat, add the vegan cream. Add two tablespoons of ketchup. Adjust the salt. Add the chopped mushrooms.
