Zucchini Muffins: 2 cups oat flour 1/2 t. baking soda 1 t. baking powder 2t. cinnamon 1/4 t. salt 1/4 cup butter 1/2 cup maple syrup 1 t. vanilla 1 egg 1 cup shredded Zucchini Mix dry ingredients together. In a separate bowl mix wet ingredients together and then combine with dry ingredients. Mix well. Fold Zucchini into batter. Place batter into muffin tin and bake at 350 for 18 to 23 minutes.
