Why couldn't farmers in the Edo period, who cultivated rice, eat their fill of white rice every morning? This installment of "Illustrated Life in Edo" explores the breakfasts of Edo-period farmers, exploring the relationship between rice and land tax, "kate-meshi" (rice mixed with barley and other grains), the simple one-soup, one-dish meals, and the wisdom of daily life that supported rural communities. For Edo-period farmers, rice wasn't just for their own consumption. Rice paid as land tax. Rice sold for cash. Rice saved for festivals and celebrations. At their daily tables, they mixed rice with locally available ingredients such as barley, millet, barnyard millet, potatoes, radishes, and their leaves, distributing their limited food resources throughout the day. The seemingly simple breakfast wasn't simply due to poverty. It was also about saving fuel. Eating quickly on busy mornings. Not wasting what was harvested from the fields. They used their food with lunch and dinner in mind. The small bowls contained practical ingenuity for continuing life in rural areas. Those who grew rice didn't necessarily have free rein to eat it. Let's look at the structure of Edo society, which revolved around rice, starting with the breakfast of Edo-period farmers.
