[Ingredients] 3 types of basic hot pot soup (Approximately 1-2 servings depending on the size of the pot) It's a little more than the usual amount, but it's meant to be added when adding the final dish after the hot pot (rice porridge, udon, ramen, etc.). *Usually each soup is boiled once before use, but at home, you can just add your favorite ingredients to the combined soup and simmer. *Ideally, the pot should be about 70% soup-filled. (The more ingredients you add, the weaker the flavor will be.) ・Soy sauce flavor 600ml stock 50ml soy sauce (3 tbsp and 1 tsp) 50ml mirin (light soy sauce is fine) 12:1:1 ratio ・Salt flavor 600ml stock Half a teaspoon soy sauce 30ml mirin (2 tbsp) 6 grams salt (1 tsp) ・Miso flavor 400ml stock (the amount in the video was small, so the ratio below is recommended) 10ml soy sauce (2 tsp) 10ml mirin ml 30g miso Slightly less than half a teaspoon of sugar (1g) 600ml dashi 15ml soy sauce (1 tablespoon) 15ml mirin 45g miso Half a teaspoon of sugar (1.5g) The dashi is basically a combination of bonito and kelp, but if you don't have it, you can use Hondashi or consommé dissolved in water. (It will be a little salty, so it's a good idea to add a little mirin or sake.) If you use soy milk, use soy milk for half the dashi. It's also delicious if you add sesame oil, olive oil, kimchi, sesame, pepper, chili pepper, etc. If you want to make it spicier, add sugar to make it tastier. In particular, salt and miso flavors become more rich when oil is added. Add according to the ingredients in the pot. *Use sake (refined sake) instead of cooking sake, and mirin (real mirin) instead of mirin-style. The food will taste much better!
