干燒伊麵怎樣做才好吃|汁底伊麵比例是重點|伊麵粗幼大餅細餅大煮法調味大不同|對岩比例做出水準幾時都獲讚👍🏻 Braised E-Fu Noodles English Subtitles 干燒伊麵其實不難煮,但大家往往都是忽略了伊麵和汁底的比例。很多影片都用「一餅餅」伊麵做單位,但每一個伊麵餅都有大有小、有粗有柔,比例不對的可能會出現過濕或過乾、調味不夠或太鹹,炒爛了甚至乎黏底的情況。今次我會教大家一個清晰的比例 令你家裡都可以輕鬆做到好像街吃的效果。 這菜式的調味比例是最重要的。李錦記的生抽、老抽和其他產品 在各大亞洲超市好像華南行、Starry Mart之外 西超的Tesco、Saintsbury's和Waitrose 都有得賣。 究竟比例是怎樣,不如我們一起煮吧 乾燒伊麵 材料: 伊麵 260克 草菇8-10粒 (或一罐) 冬菇 6-8 個 芽菜 100克 羊肚菌 4個 蔥段 2棵 李錦記純正芝麻油 少許 醬汁調味: 水 1.5杯(包括浸羊肚菌及冬菇水) 糖 1-1.5茶匙 李錦記舊庄蠔油 1.5湯匙 李錦記特級鮮味生抽 2/3-1湯匙 李錦記特級老抽 ½湯匙 Dried E-Fu noodles may seem easy to cook, but what most people overlook is the ratio between the noodles and the sauce base. Many cooking videos use “one noodle cake” as a unit of measurement, but each E-Fu noodle cake varies in size, thickness, and density. If the ratio is off, the dish can turn out too wet or too dry, under-seasoned or overly salty. The noodles may even become mushy or stick to the pan. This time, I’ll teach you a clear and reliable ratio so you can easily recreate that restaurant-quality result at home. For this dish, the seasoning ratio is the most important part. Lee Kum Kee light soy sauce, dark soy sauce, and other products are widely available in major Asian supermarkets such as HaNaHong and Starry Mart. In the UK, you can also find them in mainstream supermarkets like Tesco, Sainsbury’s, and Waitrose. So what exactly is the right ratio? Let’s cook together and find out.
