Place the duck giblets on a baking sheet, season generously with salt, and roast in the oven for 45 minutes. Meanwhile, roughly chop the apple and sauté it in a hot pan with cooking oil for 10 minutes, along with the diced vegetables and 1-2 teaspoons of salt. Add peppercorns, cloves, and a bay leaf, then deglaze with port wine. Let the port wine reduce until the meat starts to brown again. Roast for another 3-5 minutes, then repeat the process twice more with red wine. Remove the pan from the heat and add the cranberries. Peel three strips of orange zest from the orange using a vegetable peeler and juice the orange. Add the juice and zest to the pan and top up with water. Add the roasted duck bones to the pot, including all the pan drippings and fat. Bring the sauce to a boil, then simmer over low heat for 6 hours. Afterward, strain the sauce and bones through a fine sieve into another pot, pressing the bones and vegetables with a ladle to extract all the liquid. Bring the sauce to a boil and season with salt.
