Soak the goose in salt water for at least 24 hours. To do this, place the goose in a sufficiently large container, completely cover it with cold water, and measure the amount of water. Remove the goose from the water. Add 40 g of salt to the water for every 1 liter of water and stir until completely dissolved. Place the goose back in the salt water and soak for at least 12 hours, preferably 24 hours. If necessary, weigh the goose down with a plate. Meanwhile, place the container with the goose in a cool place (e.g., a balcony). Preheat the oven to 160°C (325°F) convection. For the stuffing, halve the onions and then quarter each half. Cut the celery stalks, celeriac, and apples into pieces. Place everything in a bowl and add the almonds and cranberries. Season generously with duck seasoning and mix well. Remove the goose from the brine and let it drain well. Place the goose on a baking sheet and stuff it tightly with the filling. Season the outside of the goose with duck seasoning. Close the opening with a skewer. Then place the goose in the hot oven and cook for 2.5 hours until it reaches an internal temperature of 80°C (175°F). Then place the goose on another baking sheet or a board, pour the fat from the used baking sheet into a saucepan and store it there, and place the goose back on the cleaned baking sheet. Increase the oven temperature to 210°C (410°F) using the convection setting and return the goose to the oven on the new or cleaned baking sheet.
