The stench was unbearable, and it was only until later in life that I realised how good an egg salad can be. I also found out that the over-cooked sulphurous stench that came from my sandwiches, was down to the eggs being cooked for about 10 hours! The lesson here folks is that over-cooked eggs = stinky eggs. These days eggs salad is one of my favourite things to eat in a sandwich, because done right it's amazing. The key to a good egg salad is starting off with good free range eggs, and also a decent mayo. If you get those 2 things right, then you are halfway there to a good egg salad. Some people like to put all sorts of stuff in an egg salad, but I prefer a much simpler recipe adding only some chopped fresh chives, some good seasoning and a dollop of English mustard.
