SPICY GRILLED CHICKEN RECIPE INGREDIENTS: 2 kg Chicken 3 Limes Oil for sautéing Water as needed GROUND SPICES: 15 Cloves of Garlic 12 Shallots 4 Bird's Eye Chilies (or to taste) 7 Candlenuts 2 Finger-Segments of Ginger (or 1 tsp Ginger Powder) 2 tsp Turmeric Powder 2 tsp Pepper Powder 2 tsp Coriander Powder 1 tsp Cumin Powder 2 tsp Salt (or to taste) 2 tsp Chicken Stock Powder OTHER SPICES: 2 stalks Lemongrass, crushed 5 Bay Leaves 6 Lime Leaves Galangal, bruised Palm Sugar/Granulated Sugar as needed or to taste 2-4 tbsp Sweet Soy Sauce or to taste 1 tsp Tamarind (Optional) ) ROASTED CHICKEN SLABS: Leftover Chicken Broth HOW TO COOK GRILLED CHICKEN: Wash the chicken thoroughly and then coat it with lime juice. Heat oil in a pan and sauté the finely ground bamboo and other spices. Sauté until the spices are cooked through. Add enough water, sugar, and sweet soy sauce. Add the chicken and cook until cooked through and tender (cook over medium heat and adjust seasonings). Brush the chicken with the marinade and bake in a 200-degree oven for approximately 30-45 minutes or until cooked through. Serve with rice, fresh vegetables, and basil leaf sambal. ———————————————————— BASIL LEAF SAMBAL RECIPE INGREDIENTS: Bird's eye chilies, chopped 5 cloves shallots, chopped 6 cloves garlic, chopped 2 tomatoes, chopped Basil leaves, to taste -3 lime leaves, torn into pieces -Shrimp paste (Optional) -Palm sugar/granulated sugar to taste -Salt to taste -1 tsp stock powder -Cooking oil to taste HOW TO MAKE BASIL LEAF SAMBAL: -Heat oil in a pan and fry the chilies, shallots, garlic, tomatoes, and lime leaves. -Fry briefly, then add the shrimp paste. -Once cooked, grind everything together, add salt, sugar, and stock powder. -Then add the basil leaves and stir until evenly mixed.
