AYAM BAKAR MADU SAMBAL TOMAT, TUMIS BUNCIS DAN LALAPAN

HONEY-GRILLED CHICKEN RECIPE INGREDIENTS: 2-3 kg chicken pieces 4 tablespoons cooking oil Water as needed GROUND SPICES: 15 cloves garlic 8 cloves shallots 6 candlenuts 2 pieces ginger / 1 teaspoon ginger powder 2 teaspoons turmeric powder 1 1/2 teaspoons pepper powder 1 1/2 teaspoons coriander powder 1 teaspoon cumin powder 1/2 teaspoon nutmeg powder 1 teaspoon salt or to taste 1 1/2 teaspoons bouillon powder 2 teaspoons healthy/granulated sugar 2 stalks lemongrass 2 pieces galangal 1 tablespoon tamarind (optional) OTHER SPICES: 3 bay leaves 5 lime leaves 6-8 tablespoons honey 3 tablespoons sweet soy sauce or to taste CHICKEN SPRAY GRILL: Leftover Broth HOW TO COOK HONEY GRILLED CHICKEN: Heat oil in a pan and sauté finely chopped bamboo shoots, bay leaves, and lime leaves until cooked through, then add water. Add salt, stock powder, tamarind, sweet soy sauce, and honey. Add chicken and cook until cooked through and tender. Brush grilled chicken with chicken rub. (Here, I grilled it in an oven at 170-190 degrees for 30-40 minutes.) Serve with rice, fresh vegetables, and chili sauce to taste. ———— TOMATO SAMBAL RECIPE INGREDIENTS: 2 tomatoes, chopped Shallots/onions to taste (here, I used 1 onion) 12 cloves of garlic Bird's eye chilies to taste 3 lime leaves Cooking oil to taste SEASONINGS: Javanese sugar/granulated sugar to taste 1/2 tsp salt or to taste -1 1/2 tsp Chicken Broth Powder HOW TO MAKE TOMATO SAMBAL -Heat oil in a pan and fry the chilies, shallots, garlic, tomatoes, and lime leaves. Fry until cooked through, then drain in a mortar. -Then add the sugar, salt, and bouillon powder. Grind the chili sauce until smooth, don't overcook it. Adjust the seasoning. Note: Tomato chili sauce can be fried again to preserve its freshness.
