How Oysters Are Reviving America’s Great Bays One oyster filters up to 50 gallons a day. New York Harbor once held close to half the oysters on Earth. Then we lost almost all of it. The Dutch named Ellis and Liberty islands "Little Oyster" and "Great Oyster." By 1927 the last commercial bed in New York closed, and the Chesapeake fell to 1 to 2% of its historic reefs. Now people are putting the animal back by the hundred million. The Chesapeake hit its goal to restore reefs in 10 tributaries by 2025, and Maryland's oyster population has tripled since 2005. In New York, the Billion Oyster Project has returned more than 150 million oysters using 2 million pounds of recycled restaurant shells. Divers are finding seahorses and pufferfish in water everyone wrote off as dead. It's a comeback in progress, not a finished win.
