Khagineh 🍯✨ Khagineh is a traditional Iranian dessert that is incredibly easy to make and ready in just 20 minutes (plus chilling time). Soft, fragrant, and soaked in saffron syrup, it’s the perfect sweet treat for any occasion. Syrup: • 1 cup sugar • 3/4 cup water • Saffron powder • A few drops of lemon juice Bring the sugar and water to a boil. Add saffron and lemon juice, then let the syrup cool completely. Khagineh: • 2 eggs • 3 tbsp yogurt • 1/2 tsp vanilla • Saffron powder • 5 tbsp flour • Cardamom powder • Cinnamon powder • 1 tsp baking powder Whisk the eggs, yogurt, and vanilla until combined. Add saffron, flour, cardamom, and cinnamon. Finally, add the baking powder and mix gently. (Adding the baking powder last is important.) Melt a little butter in a hot pan and pour in the batter. Cover and cook over low heat until golden, then flip and cook the other side. Pour the cold syrup over the hot Khagineh and refrigerate for 2 hours before serving.
