This might be the first time you've heard of ZUCOTTO, but you'll certainly never forget it! Check out the step-by-step instructions for this delicious dessert: 😍 DOUGH AND FILLING 1 500g panettone 1/2 cup (85g) sugar 1 1/4 tablespoons (20g) water 3 egg yolks (65g) 250g fresh cream whipped to stiff peaks 250g mascarpone cheese 4g unflavored gelatin 1 cup chopped walnuts 1 cup chopped maraschino cherries Line a round glass bowl with plastic wrap. Slice the panettone (approximately 1.5cm slices) and line the sides of the bowl. Beat the egg yolks in a mixer until light and fluffy. In a saucepan, combine the sugar and water and mix. Cook over medium heat until it reaches the thread stage. Pour the syrup over the egg yolks while the mixer is running and beat until cool. Set aside. Hydrate the gelatin in cold water, drain, and then microwave for 10 seconds to melt. In a mixer, beat the heavy cream until stiff peaks form and add the mascarpone cheese. Beat until well combined. Add the egg yolk mixture and mix. Take a tablespoon of the cream and mix it into the melted gelatin. Then, pour the gelatin mixture over the cream in the mixer and beat well to combine. Add the walnuts and cherries to the cream and stir with a spoon. Pour the cream over the panettone base and cover with slices of panettone to "close" the zucotto. Freeze for at least 1 hour and 30 minutes. Unmold by pulling on the plastic wrap and cover with the ganache. Decorate with sprinkles or chopped nuts. TOPPING 300g semi-sweet chocolate 200g fresh cream Chop the chocolate. Heat the fresh cream in a saucepan and pour over the chocolate. Stir until the chocolate melts and the mixture is smooth. Let it rest covered with plastic wrap until it has a creamy texture. Use to cover the panettone zucotto with the help of a spatula. Decorate with pieces of nuts or chocolate sprinkles.
