Rita Lobo teaches how to make CHICKEN SALAD WITH CREAMY YOGURT. In this version, the mayonnaise is replaced with unsweetened natural yogurt and made with leftover roast chicken from Christmas dinner. #NhacGNT #PracticalCooking #RitaLobo Ingredients: 1 cup (tea) of shredded roasted chicken 1 ⅓ cups (tea) of natural yogurt (2 pots of 170g each) 1 carrot 1 stalk of celery (without leaves) 1 green apple ¼ cup (tea) of white raisins ¼ cup (tea) of toasted and chopped walnuts Juice of 2 lemons 1 teaspoon of Dijon mustard 3 sprigs of mint Olive oil to taste Salt and freshly ground black pepper to taste Preparation: Line a sieve with a clean, thin cotton cloth and place it over a bowl (if you prefer, use 2 disposable coffee filters cut in half). Place the yogurt in the lined strainer and refrigerate for 30 minutes to drain — the yogurt will gradually release the whey and become creamier. Meanwhile, prepare the remaining ingredients. In a small bowl, place the raisins and cover with the juice of 1 lemon to hydrate. Wash and dry the carrot and celery stalks. Peel and grate the carrots using the coarse side of a grater. Using a vegetable peeler, remove the surface fibers from the celery. Use a mandoline to slice the stalks very thinly (or slice thinly with a knife if you prefer). Fill a medium bowl with water, mix in the juice of the other lemon, and add ice cubes. Wash and dry the apple. Keep the peel on and cut the fruit into 0.5 cm slices, discard the seeds, and cut the slices into 0.5 cm strips. Transfer the sliced ​​apple to a bowl with ice water and set aside until ready to serve – this prevents the fruit from browning. Finally, wash, dry, and finely chop the mint leaves. In a large bowl, place the shredded chicken, grated carrot, sliced ​​celery, and hydrated raisins (with their liquid). Drain the water and add the apple to the vegetables. Add the mint, yogurt, mustard, and walnuts. Season with 2 tablespoons of olive oil, salt, and pepper to taste.
