Mix well and let it rest for 5–10 minutes until frothy. Add maida and knead into a soft dough. Add softened butter gradually and knead for 10–15 minutes until the dough becomes smooth and elastic. Cover the dough and let it rise in a warm place for 1–1½ hours or until doubled in size. Punch down the dough, divide it into equal portions, and shape into smooth balls. Arrange them on a baking tray lined with butter paper, leaving space between each bun. Cover and let them proof again for 30–40 minutes. Brush the tops with milk (or melted butter) for a beautiful golden finish. Bake in a preheated oven at 180°C for 18–22 minutes until the buns turn golden brown.
