The other day, I got a recipe for Disco Nuts that are completely flour-free. They say that using glutinous rice flour makes them tastier because they're not only crunchy but also don't leave a lump in your throat. And after trying it out, oh my God, it turned out to be true. The combination of glutinous rice flour and rice flour produces delicious and super crunchy curly egg nuts. Oh, by the way, what are they called in your area? #KacangDisco? #KacangKribo? Okay, whatever the name, these savory and crunchy Disco Nuts are guaranteed to keep you chewing. Perfect for filling jars for Eid, or as a business idea. So, for those of you who want to try them, here's the recipe; I hope you find it helpful. INGREDIENTS 500 g washed peanuts, roasted for 5 minutes, just until dry. 150 g or about 10 tbsp white glutinous rice flour 50 g or about 3 tbsp white rice flour 5 to 10 kaffir lime leaves, finely chopped INGREDIENTS TO BE BLENDED 2 large eggs (if small, use 3 eggs) 5 large red chilies 5 red cayenne peppers, to taste 5 cloves of garlic, minced, or substitute with 1 sachet of garlic powder 75 g or about 5 tbsp granulated sugar 1 tsp fine salt 1 tsp ground coriander, optional 10 g powdered beef stock or substitute with 1 packet of Royco Beef Flavor 1 tsp liquid vanilla or substitute with 1 tsp vanilla powder NOTE: If you want to make a version without chilies, simply omit the chilies. Reduce the salt slightly, and use only 3 or 4 tablespoons of sugar. The rest of the ingredients remain the same. If you have small eggs, use 3 for a crispy result.
