INGREDIENTS: 2 puff pastry sheets - 700 g eggplant - 350 g tomato puree - 10 g tomato paste - a few fresh basil leaves - 1 garlic clove - salt, pepper, and extra virgin olive oil to taste. - a pinch of chili pepper (optional) - 200g mozzarella for pizza - 80g Asiago cheese (or other cheese) - an egg for brushing the pastry - 3/4 slices of cooked ham (you can leave it out) HELPFUL TIPS: When I make this pie, I choose not to fry the eggplant. First of all, they're delicious as is, and secondly, it's summer, so the fat from the pastry and cheese is more than enough. Cooking the eggplant in a pan is crucial to remove all the excess water. For the filling, you need a very dry mixture to avoid ruining the pastry, which needs to be crispy.
