Pour mixture into blender with 1c of chicken stock. Procses on medium speed until pureed. Insame saucepan, melt butter; stir in flour, salt, and pepper. Add remaining chicken stock and cook until mixture boils, stirring constantly. Stir in spinach mixture, simmer covered, 10 minutes. Ad cream; heat through. Serve garnished with lemon slices or a dollop of sour cream. POTATO SOUP (pg 513) 2 to 3 slices of bacon, cut into small pieces 3 medium potatoes, peeled and cubed 2 stalks of celery, chopped 2 medium carrots, diced 1 small onion, cohpped 1tsp salt 1/8tsp pepper 1c water 2Tbsp flour 2c milk In large saucepan, fry bacon until crisp; drain on paper towel. To drippings, add potatoes, celery, carrots, onion salt, pepper, and water. Cook covered about 15 minute or until tender. Combine flour with small amount of milk until smooth. Add to potato mixture along with remaining milk. Cook over medium heat until mixture boils. Garnish with crumbled bacon. CHEESE SOUP DELIGHT (pg 513) 2Tbsp butter 3Tbsp flour 1c milk 1 - 10 1/2oz can condensed chicken broth 1/8tsp salt Dash of pepper 2 to 4 tablespoons white wine or beer (I used beer) 1/4tsp Worcestershire sauce Dash Tabasco sauce 4oz grated sharp cheddar cheese In medium saucepan, melt butter; add flour and blend. Heat until bubbly, stirring constantly. Add milk and chicken broth; stir until smooth. Add salt, pepper, wine or beer, Worcestershire and Tabasco; heat to boiling, stirring occasionally. Remove from heat; add cheese and stir until cheese is melted and smooth.
