Vintage Skillet Meals: Cooking from a 1970s Cookbook!

Better Homes and Gardens Easy Skillet Meals (1972) ------------------------------ PATREON:   / cookingallthebooks   INSTAGRAM: instagram.com/_cookingthebooks_ FACEBOOK:   / cookingallthebooks   WEBSITE: https://www.cookingthebooks.net/ ------------------------------ ITALIAN SKILLET MEAT LOAVES (pg 13) 1 beaten egg 1/4c soft bread crumbs 1/3c milk 2 tsp instant minced onion 1 tsp dried parsley flakes 1/2 tsp garlic salt Dash pepper 1/2lb lean ground beef 1 - 3 1/2" x 3/4" sticks Monterey Jack Cheese 1 Tbsp cooking oil 8oz pizza sauce Hot cooked spaghetti Combine egg, bread crumbs, milk, instant minced onion, parsley flakes, garlic salt, and pepper. Add ground beef; mix well. Divide mixture in half. Shape each portion into a little meat loaf around a stick of cheese. In a small skillet, brown the loaves on all sides in hot oil. Pour off drippings. Add pizza sauce. Cover and reduce heat. Simmer 15 minutes. Serve with hot cooked spaghetti. Makes 2 servings. SPAINISH POTATO OMELET (pg 25) 2 large potatoes, peeled and finely chopped (3 cups) 1/2c finely chopped onion 5 Tbsp olive oil 6 beaten eggs 1/3c milk In 10" skillet cook potatoes and onion in 3 Tbsp of the oil until tender, turning occasionally. Season with 1/2 tsp salt. Remove from heat. Combine eggs, milk, 1/2 tsp salt, and dash pepper. Stir in potato mixture. Heat remaining 2 Tbsp oil in same skillet. Pour in egg mixture. Cover; reduce heat. Cook until omelet is nearly set, about 10 minutes. Invert omelet by placing plate over skillet and turning over. Slide the omelet back into the skillet, moist side down. Cook until underside is set, about 1 to 2 minutes. Loosen and slide onto serving plate. Makes 4 servings. SASSY ZUCCHINI (pg 12) 1lb ground beef 1c chopped onion 3/4c water 16oz canned diced tomatoes 1 - 1oz envelope spaghetti sauce mix 1 tsp salt 1c uncooked packaged precooked rice (Minute Rice) 1 1/2lb zucchini, cut up into 1" wide strips (4 cups) In large skillet, cook ground beef and onion until meat is browned and onion is tender. Stir in water, undrained tomatoes, spaghetti sauce mix, and salt. Bring to boiling. Stir in rice and zucchini pieces. Cover tightly; reduce heat. simmer, stirring occasionally, until zucchini is tender, 15 to 20 minutes.
