Yes, you read that correctly... 1950s Budget Recipes: • 1950s BUDGET RECIPES 🍽️ Money Saving Meals... 1960s Budget Recipes: • 1960s BUDGET RECIPES 😋 Money Saving Meals ... ------------------------------ SOUPERBURGER (pg 98, $1.20 per serving) 4lbs ground beef 2c chopped onion 2T salad oil 4 cans condensed cream of mushroom soup 3Tbsp prepared mustard 1/8tsp pepper In large heavy pan, brown beef and cook onion in oil until tender. Pour off fat. Stir in soup, mustard, and pepper. Heat; stir occasionally. Serve on buns. Makes about 12 cups. SAUSAGE SKILLET ROMA (pg 41, $1.59 per serving) 2 medium zucchini (about 1/2lb), cut in half lengthwise 1lb bulk sausage 1 can condensed cream of mushroom soup 1/2c thinly sliced onio 1 medium garlic clove, minced 1 medium tomato, cut into wedges Cut squash into 1" pieces. Shape sausage into 16 meatballs. In skillet, brown sausage; pour off fat. Add remaining ingredients except tomato. Cover; cook over low heat 15 minutes or until done. Stir occasionally. Add tomatoes; cook 5 minutes more. Makes about 4 cups. CHICKEN CROQUETTES (pg 44, $1.47 per serving) 1 can condensed cream of chicken soup 1 1/2c finely chopped cooked chicken 1/4c fine dry bread crumbs (plus more for outside of croquettes, if desired) 2Tbsp finely chopped celery 1Tbsp finely chopped onion 1/4tsp poultry seasoning Shortening 1/2c milk To make croquettes, combine 1/3c of soup, chicken, bread crumbs, celery, onion, and 1/8tsp of the poultry seasoning. Mix well; shape into 6 croquettes or patties (if mixture is difficult to handle, chill before shaping). Roll in additional bread crumbs if desired. In skillet, brown croquettes in shortening. Meanwhile, in saucepan, combine remaining soup, 1/8tsp poultry seasoning, and milk. Heat; stir occasionally. Serve with croquettes.
