That four-dollar box of crackers in your pantry is mostly air, seed oils, and preservatives you can't pronounce. A real cracker is the simplest food there is — flour, a little fat, salt, and water — rolled thin and baked crisp. In this video I show you the old Amish way to make crackers in your own kitchen in under an hour, better than anything in the box, for pennies. I give you the exact amounts (2 cups / 240 g flour, 1 tsp salt, 4 Tbsp / 57 g butter or lard or ¼ cup oil, and ½–⅔ cup cold water), exactly how thin to roll the dough (1/16 inch — about as thick as a coin or a strand of dry spaghetti), the one step almost everyone forgets (docking the dough with a fork so it doesn't puff into pillows), and the exact heat and time to bake them golden and crisp (350°F / 175°C for 20–25 minutes). I'll also show you how to turn the basic dough into cheese crackers, seeded crackers, rye-style, and sweet crackers. Four honest ingredients you can name, in less than an hour.
